Cake Ingredients

Ingredient A

10 Whole Eggs

250 g Granulated Sugar

 30 g Bakerline SP Maxi 68 (emulsifier)

 

Ingredient B

235 g Medium-Protein Wheat Flour

  20 g Cornstarc

  20 g Milk Powder

    1 g Vanilla Powder

 

Ingredient C

100 g Avena Margarine

  25 g Butter

 

Chocolate Paste Ingredients

10 g Elmer Cocoa Powder AF. Red 20–24%

  5 g Elmer Cocoa Powder AF. Black 10–12%

55 g Hot Water

25 g Chocolate Paste

  5 g Mocha Paste

 

How to Make the Chocolate Paste:

Stir all ingredients together until well combined.

 

How to Make Hong Kong Bun Cake:

1. Beat Ingredient A with a mixer until foamy. Gradually add Ingredient B while mixing on medium speed until the batter becomes thick and leaves a trail.

2. Melt Ingredient C, then slowly pour it into the batter while continuing to mix at a low speed.

3. Divide the batter into three parts per baking pan:

    a. 350 g Vanilla Batter (place in a piping bag)

    b. 230 g Chocolate Batter (place in a piping bag)

    c. 125 g Mocha Batter (place in a piping bag)

4. Pipe the batters into a greased baking pan in layers: start with the vanilla batter, followed by chocolate, then mocha, and finish with a final layer of vanilla on top.

5. Bake in a preheated oven using bottom heat at approximately 170°C for about 30 minutes.

6. Once baked, remove the cake from the oven and let it cool completely before taking it out of the pan.
