Nastar Cookies Recipe

Nastar is a beloved Indonesian pastry, especially popular during Eid. These buttery, pineapple-filled cookies are a staple in many households during Lebaran. Follow this recipe to create delicious homemade Nastar cookies.

  Ingredients

   Dough Ingredients

    Ingredient A:
    - 200 g Butter  
    - 100 g Margarine  
    - 75 g Bakerline Icing Sugar  

    Ingredient B:
    - 1 Whole Egg  
    - 1 Egg Yolk  

    Ingredient C:
    - 500 g Medium Protein Wheat Flour  
    - 40 g Milk Powder  

   Spreadable Ingredients
   - 4 Egg Yolks  
   - Egg Yolk Colorant (to taste)  
   - 30 g Sweetened Condensed 

How to Make the Spread
Mix all ingredients until well combined. Set aside.

   Nastar Filling
   - 2 Medium Ripe Pineapples  
   - 250 g Granulated Sugar  
   - 2 Cinnamon Sticks (5 cm each)  
   - 4 g Cloves

How to Make the Nastar Filling:
1. Peel and grate the pineapples until smooth, then cook over medium heat.
2. Add cinnamon and cloves, stirring occasionally. Cook until the liquid reduces.
3. Add sugar and continue cooking until the filling turns brownish and caramelized.
4. Let the filling cool, then weigh 5g portions and roll into small balls.
5. Store in an airtight container and refrigerate.

  How to Make Nastar Dough
  1. Beat Ingredient A until creamy.
  2. Gradually add Ingredient B, one at a time, while continuing to beat.
  3. Sift Ingredient C and mix into the dough until well blended.
  4. Divide and roll the dough into 10g portions, then flatten each piece.
  5. Place 5g of pineapple filling in the center, wrap, and roll into smooth balls.
  6. Arrange on a greased baking sheet.

  Baking Process
  1. Preheat oven to 150°C (300°F).
  2. Bake the cookies for 20 minutes, then remove from the oven.
  3. Brush the surface of each cookie with the prepared egg yolk spread.
  4. Return to the oven and bake for another 5 minutes.
  5. Repeat the spreading process and bake for a final 5 minutes.
  6. Once fully baked, transfer the cookies to a cooling rack.
  7. Let them cool completely before storing in jars.

  Yield
  This recipe makes 4 jars of Nastar cookies, each containing 250g.
