Recipe - Cromboloni

Cromboloni, also known as New York Roll, consists of two pastry combinations! This snack combines croissant and bomboloni, thanks to its uniqueness and deliciousness, this snack went viral again in late 2023. Elmer Lovers can find millions of Cromboloni videos on social media, especially TikTok.

DOUGH INGREDIENTS:

1000 grams High Protein Flour

20 grams Instant Yeast

18 grams Salt

120 grams Granulated Sugar

5 grams Maxi Soft (Improver)

20 grams Milk Powder

50 grams Eggs

50 grams Butter

200 grams Liquid Milk

270 grams Cold Water

500 grams Lamination Butter

 

FILLING INGREDIENTS:

Ganache

Elmer Spread Crunchy series

Elmer Dip Glaze series

Elmer Filling Paste Dark Tropical/Cheese

Bakerline Violetta Strawberry/Blueberry

 

TOPPING INGREDIENTS:

Elmer Compound block series

Elmer Spread Crunchy series

Elmer Dip Glaze series

 

Instructions:
  1. Mix all dry ingredients until evenly combined with a mixer, then add liquid ingredients and eggs.
  2. After it forms a lump, add butter and mix for about 3 minutes, then switch to medium speed.
  3. Mix until 80% smooth, remove from mixer, flatten the dough, wrap it in plastic, and cool it in the freezer for about 30 minutes (until it reaches a temperature of around 5 to 10 degrees).
  4. Roll out the dough to a thickness of ±7mm, then cover half of the dough with a butter sheet, and cover the butter sheet with the dough.
  5. Roll out the dough to a thickness of 6 mm, and do a double fold, then roll out again until it reaches a thickness of 6 mm and do a single fold.
  6. Wrap in plastic and cool in the freezer for about 30 minutes or until the dough slightly hardens.
  7. Roll out the dough to a thickness of 3.5 to 4 mm and cut the dough into lengths of about 35 cm and width of 4 cm (for molds with a diameter of 10 cm and depth of 5 cm).
  8. Roll the dough and don't make it too tight, then place it in a greased mold.
  9. Ferment until 3/4 near the edge of the mold, cover the mold, and bake at 200°C for about 20 minutes.
  10. Remove from the mold and let it cool. Then poke holes around the edges, and fill/inject with filling ingredients (ganache, jam, Elmer Dip Glaze, Elmer Filling Paste Dark Tropical).
  11. Decorate the edges with chocolate and Cromboloni is ready to serve.
