Recipe - Vanilla Melonade Tartlet

October is always associated with the crisp autumn atmosphere, Halloween celebrations, and the ideal time to savor delightful sweet treats. To celebrate this month specially, Elmer Chocolate presents the Vanilla Melonade Tartlet—a creation that is not only delicious but also visually captivating. This tartlet combines a rich chocolate tart, smooth vanilla crème brûlée, and a delicate melon mousse, making it an exquisite snack for relaxing moments or as a dessert for autumn festivities.

VANILLA MELONADE TARTLET

CHOCO TART

Ingredients A

80 gr Butter

50 gr Bakerline Icing Sugar

25 gr Milk Powder

1 Egg

 

Ingredients B

100 gr Medium-Protein Flour

  10 gr Elmer Af. Red 20-24% Cocoa Powder

 

Instructions
  1. Combine Ingredients A thoroughly, then incorporate the sifted Ingredients B.
  2. Chill the dough for approximately 30 minutes.
  3. Roll out the dough to a thickness of 5 mm, according to a 20 cm tartlet mold.
  4. Prick the dough to prevent bubbling.
  5. Bake at 175°C (347°F) for 15 minutes.

 

VANILLA CRÈME BRÛLÉE

Ingredients A

1 Egg Yolk

 

Ingredients B

60 gr Sweetened Condensed Milk

  2 gr Vanilla Extract

 

Ingredients C

12 gr Gelatin + 36 grams Ice Water

10 gr Elmer Dip Glaze White

 

Ingredients D

200 ml Fresh Milk

  75 ml Water

    8 gr Granulated Sugar

 

Instructions
  1. Heat Ingredients C, then add Ingredients B and mix well.
  2. Transfer a portion of the mixture to the egg yolk and stir until well combined.
  3. Heat the gelatin (pre-soaked in water) with Elmer Dip Glaze White, and cook in a pan until the mixture becomes foamy.
  4. Allow the mixture to cool until steam dissipates, then pour into the pre-baked tart shell that has been coated with chocolate.

 

MELONADE MOUSSE

Ingredients A

50 gr Elmer Vista Festival Melon

25 gr Fresh Milk (UHT)

 

Ingredients B

120 gr Dairy Whipping Cream

    5 gr Gelatin

  20 gr Cold Water

 

Instructions

  1. Heat Ingredients A and mix until combined.
  2. Heat the gelatin (pre-soaked in water) until it becomes gel-like, then add it to Ingredient A.
  3. Pipe the mixture onto 18 cm and 8 cm rings, and freeze until solid.

 

Assembly
  1. Tartlet shell
  2. Vanilla crème brûlée
  3. Melon mousse
  4. Garnish
