TWO-TONE SOFT COOKIES
(Half Batch)
Ingredients A
160 g West Land Butter Blend
Ingredients B
150 g Brown Sugar
2 g Salt
3 g Vanilla
Ingredients C
1 Large Egg
Ingredients D
255 g Medium-Protein Flour
3 g Baking Soda
Ingredients E
As needed Red Velvet Paste/Food Coloring Blue
Ingredients F
200 g Elmer Royal Baker Coverture/Elmer Compound Dark Classic (chopped)
Instructions:
- Heat Ingredients A until it reaches a boil and stops bubbling.
- Pour it into Ingredients B and mix until the temperature cools.
- Add Ingredients C and stir until well combined.
- Incorporate Ingredients D and mix until the dough is uniform.
- Take 250g of the dough and mix in Ingredients E (for the outer layer).
- Combine Ingredients F with the remaining dough (for the inner layer).
- Weigh the dough into 35g portions, add Ingredients F, and shape into balls.
- Bake at 170°C for approximately 8 minutes.
Filling Ingredients
300 g Elmer Filing Pasta Dark Tropical
Finishing:
- Fill the brown dough (inner dough) with Elmer Filing Pasta Dark Tropical.
- Cover with the colored dough and shape into a ball.
- Bake at 170°C for about 8-10 minutes.
- Once baked, press the cookies slightly to achieve the desired texture.
