Recipe - Thai Milk Bun

The beginning of 2024 was enlivened by the viral sensation of Thai Milk Bun, a sweet bread filled with cream and sprinkled with super soft milk powder. This sprinkle of milk powder makes its taste even richer, sweeter, and unique. BREAD INGREDIENTS

Ingredient A

400 grams High Protein Flour
100 grams Medium Protein Flour

100 grams Granulated Sugar

  50 grams Milk Powder

    7 grams Instant Yeast

    3 grams Bread Improver

 

Ingredient B

200 grams Liquid Milk

1 whole Egg

2 Egg Yolks

 

Ingredient C

75 grams West Land Butterblend

7 grams Salt

 

Instructions:
  1. Mix Ingredient A briefly until evenly combined.
  2. Add Ingredient B until it forms a lump. Additional liquid (liquid milk) can be added if necessary, about 100 grams.
  3. Add Ingredient C until it's completely smooth. After smooth, let the dough rest for 10 minutes.
  4. After resting, divide the dough into 20 grams each and round it. Let the dough rest again and proof for 15 minutes.
  5. Bake the dough at 170 degrees Celsius with bottom heat, 160 degrees Celsius with top heat for 12-15 minutes.

 

DIPLOMAT CREAM INGREDIENTS

200 grams Bakerline Custard Powder Vanilla

100 grams Cold Milk

200 grams Whipping Cream

  50 grams Elmer Dip Glaze

 

Instructions:
  1. Whip Ingredient C until half soft peak, then set aside.
  2. Mix Ingredient A and Ingredient B, mix until thick. Then add Ingredient C, mix until evenly combined.
  3. If you want the cream to have different colors and flavors, add Ingredient D. Mix until evenly combined.

TOPPING DOUGH

150 grams Unsalted Butter

  75 grams Sweetened Condensed Milk

 

Instructions:

Mix 150 grams of unsalted butter until fluffy, then add sweetened condensed milk and mix until evenly combined.

 

Assembly:

Poke holes in the milk bun, then fill with the prepared diplomat cream. Brush with the prepared topping. Decorate as desired.
