FRENCH MACARON CLASSIC

Ingredients A

150 g Almond Powder

150 g Bakerline Icing Sugar

Ingredients B 

 

300 g Sifted Ingredient A

  55 g Egg Whites

  10 g Elmer African Red 20-24% Cocoa Powder

Ingredients C 

 

150 g Granulated Sugar

  35 g Water

  55 g Egg Whites

 

Instructions:

1. Blend and sift ingredients A until fine.

2. Combine all of ingredient B in a bowl.

3. For ingredient C, cook granulated sugar and water until it reaches 118?C, then whisk egg whites until they form peaks, then add the cooked mixture into the whisked egg whites (soft peaks).

4. Fold ingredient C into ingredient B until well mixed.

5. Pipe the batter onto wax paper using a piping bag.

6. Leave at room temperature for 10-15 minutes until the batter surface dries.

7. Bake in an oven at 120?C - 130?C for 20-25 minutes until done.

8. Once cooled, fill with various cream fillings.

 

CREAM FILLING

250 g Cream Cheese

100 g Melted Elmer Dark Compound Classic*

  50 g UHT Liquid Milk

 

Cream Filling Instructions:

1. Beat cream cheese until smooth.

2. Add the melted Elmer Dark Compound Classic* mixed with UHT liquid milk, then stir until well combined.

 

*Notes: The cream filling can use various Elmer Compound block variants such as Elmer Compound Dark, White, Special Flavoured, Vista Festival, or Elmer Dip Glaze.
