EXOTIC GREEN TEA LAYER CAKE
SPONGE CAKE
Ingredients A
6 Eggs
150 gr Granulated sugar
10 gr Bakerline SP Maxi 68 Cake Emulsifier
Ingredients B
80 gr All-purpose flour
15 gr Cornstarch
15 gr Powdered milk
20 gr Green tea powder
Ingredients C
100 gr Avena Margarine
50 gr Elmer Dip Glaze Green Tea
2 gr Dark green food coloring
Instructions
- Whisk Ingredients A until thick and ribbony. Gradually incorporate the sifted Ingredients B, mixing until well combined.
- Melt Ingredients C, then fold into the batter until evenly mixed.
- Divide the batter among three 22 x 22 cm pans and bake at 170°C (340°F) for approximately 20 minutes, or until a toothpick inserted into the center comes out clean.
GREEN TEA SIMPLE MOUSSE
100 gr Elmer Dip Glaze Green Tea
150 gr Whipping cream
15 gr Bakerline Custard Powder Vanilla
Instructions
- Whip the whipping cream and Bakerline Custard Powder Vanilla until thick and fluffy. Gently fold in the Elmer Dip Glaze Green Tea until well combined.
CARAMEL SIMPLE MOUSSE
100 gr Elmer Dip Glaze Caramel
150 gr Whipping cream
15 gr Bakerline Custard Powder Vanilla
Instructions
- Whip the whipping cream and Bakerline Custard Powder Vanilla until thick and fluffy. Fold in the Elmer Dip Glaze Caramel until evenly mixed.
GREEN TEA LIGHT GANACHE
Ingredients A
200 gr Elmer Vista Festival Green Tea
100 gr Fresh cream
Ingredients B
5 gr Gelatin powder
20 gr Cold water
Instructions
- Melt Elmer Vista Festival Green Tea and warm the fresh cream. Combine both ingredients, stirring until smooth.
- Dissolve Ingredients B and fold into the mixture of Ingredients A until evenly incorporated.
Assembly
- Place the first layer of sponge cake on a serving plate. Spread with green tea simple mousse, then cover with the second layer of cake.
- Spread caramel simple mousse over the second layer and place the third sponge cake layer on top. Smooth the remaining mousse over the surface of the cake.
- Freeze for 4 hours until firm.
- Remove from the freezer and pour the green tea light ganache over the surface of the cake. Trim the edges neatly and decorate as desired.
