CRUNCHY MOUSSE CREPES
Ingredients A
250 g Medium protein flour
25 g Tapioca flour
25 g Granulated sugar
2 g Salt
2 g Vanilla
20 g Elmer Cocoa Powder Af. Red 20-24%
Ingredients B
500 ml Water
1 Egg
65 g UHT milk
6 g Salad oil
Instructions:
- Mix and sift all ingredients A.
- Add ingredients B. Stir until no lumps remain, then strain the batter.
- Pour onto a crepe pan and cook.
- Fill with crunchy mousse and fold into a rectangular shape. Garnish with Bakerline Donut Dusting.
Crunchy Mousse
300 g Elmer Crunchy series Spread
200 g Bakerline Whipped Cream
600 g UHT milk
Instructions:
- Whip Bakerline Whipped Cream and cold UHT milk until foamy, then add Elmer Crunchy series Spread.
